Mardi gras recipe: Oreillettes
This year, Mardi Gras (Fat Tuesday) will be on March 4th. For this special occasion, we will share with a traditional recipe: les Oreillettes
Each region has its own name for this type of treat, with similar specialties like Bugnes, classic beignets, or Merveilles. However, in the south, the true delicacy is Oreillettes, traditionally made by grandmothers.
Our attempt to try to describe Oreillettes would be to say they are thin, crispy, and golden.
They come in the form of delicate sheets of fried dough, slightly puffed, and dusted with sugar. Their texture is both light and crunchy,
often enhanced by a hint of orange blossom or lemon.
Ingredients:
- 2 cups of flour
- 2 eggs
- ½ packet of baking powder
- 2 tablespoons of melted butter
- 1 tablespoon of sunflower oil
- 1 tablespoon of granulated sugar
- A few drops of orange blossom water
Instructions:
1. Combine all ingredients and knead the dough for about 10 minutes on a work surface.
2. Form a ball and let it rest for about 1 hour under a clean cloth.
3. Roll out the dough with a rolling pin until it is 1 millimeter thick.
4. Cut the dough into rectangles about 2.76 inches by 5.51 inches and fry them in a bath of very hot oil. Once the Oreillettes are golden on both sides, drain them on paper towels and dust with powdered sugar immediately!
